Awesome Asparagus and Chicken Pasta Salad!


Prep time: 10 minutes                   Cooking time: 10 minutes            Serves: 4

8oz. (250g)          Penne pasta

2                             Cloves garlic minced

1 lb. (500g)          Asparagus, trimmed

2 cups (500ml)   Cubed, grilled chicken

1 large                   Portobello mushroom, cut in thin slices

2 tsps (25ml)      Each, olive oil and red wine vinegar

½ cup (125ml)    Salsa

2 tbsp (25ml)      Chopped fresh parsley

Salt and Pepper to taste

In a large saucepan with least 12 cups (3 L) boiling salted water cook penne pasta for 5 minutes. Add garlic and asparagus, return to slow boil. Reduce heat and simmer gently for 5 minutes or until penne and asparagus are just tender. Drain and place in large bowl. Add chicken and mushroom, oil and vinegar; toss well to coat. Add salsa and parsley; toss gently. Season with salt and pepper to taste.
