This is an absolutely irresistible recipe my sister makes... with the Zucchini fresh in the garden right now, I thought this would be a great time to share! I could eat the whole batch to myself, its mouth watering goodness!
- 1/2 Cup of butter or marg.
- 1 1/3 Cup of sugar
- 2 Eggs
- 1/2 Cup oil
- 1/2 Cup of sour milk (add 1 Tbsp Vinegar)
- 1 Tsp Vanilla
- 2 Cups Shredded Zucchini
- 2 1/2 Cup Flour
- 1/3 Cup Cocoa
- 1 Tsp Baking soda
- 1/2 Tsp Baking powder
- 1/2 Tsp Cinnamon
- 1/2 Tsp Salt
Mix all ingredients together without over mixing (OVERMIXING CAUSES DRY MUFFINS ;))
- 3/4 Cup semi-sweet chocolate chips (put the chips on top before baking)
Bake at 350 degrees for 20 minutes, take a toothpick and put in muffin, if it comes out clean they are done! Let cool and ENJOY!!
These also freeze great and make a great semi-healthy snack on the go!!
