Grandma's Christmas Thimble Cookies

1 cup of butter or margarine

1/2 cup brown sugar

2 egg yolks (place egg whites in separate bowl)

2 cups white flour

Finely chopped walnuts (Approx. 1 cup)

Cream butter or margarine and sugar in a bowl. Add egg yolk and flour, mix well. Roll into small one inch balls. Beat egg whites until foamy and dip balls into egg whites then roll into finely chopped walnuts.  Place on an un-greased cookie sheet.  Make an indentation in middle of each ball with a "thimble" or 1/4" measuring spoon and bake for 5 minutes in 350 degree oven.  Press in indentation again and return to oven until golden brown.  Watch carefully.  Remove from oven and fill with your favorite jam or jelly.
