 Grandma's Rhubarb Relish Recipe

  8 cups chopped rhubarb

  8 cup chopped onion (sweet/spanish/white)

  3 cups white or cider vinegar

  4 cups white or brown sugar

  2 teaspoon cinnamon

  1 teaspoon ground cloves

  2 teaspoon black pepper

  2 teaspoon table salt


Simmer all ingredients, uncovered, for 2 to 3 hours until nice and thick. Stir, taste test and add more cinnamon, cloves or pepper if needed.  Watch closely as this mixture will burn easily. Flavour should be sweet, tangy & peppery.   Place in sterilized 1/2 pint or 1 pint jars.  Absolutely delicious on roast beef, hamburgers, fresh ham, pasteries filled with ground meat and/or chicken.
