Cheesy Cauliflower Bake

4c. chopped cauliflower (fresh or frozen)
4 slices cooked bacon, crumbled
3 eggs, beaten
1/2 medium onion, finely chopped
2 tbsp Olive Oil
1c. grated parmesan cheese
2 cloves garlic, minced

Prenheat oven to 350 degrees.  Heat olive oil in a large skillet.  Add onions and garlic and cook until lightly browned.  Add cauliflower and stir.  Let simmer for about 2-3 minutes.  Remove from pan and mix with remaining ingredients in a large bowl.  Spray a 9 X 13 baking dish with non-stick cooking spray.  Pour mixture, bake for 20-30 minutes or until golden brown.  Cut into six equal squares.  Refrigerate leftovers for up to three days.
