Dressing for Dinner

No one wants to be under-dressed for dinner, but it's kind of embarrassing when you need to excuse yourself to go remove your belt and untuck your shirt.  That's why we were told right upfront to wear our stretchy pants, and I'm so glad we did (okay, I did...Roger doesn't own any stretchy pants...thank goodness!).  But, seriously, Realtors appreciate full disclosure.

We've all heard that you can't trust a skinny chef, right?  Well, Stefan Schuster ("Chef Stef") of the Hillcrest House Bed & Breakfast in Uptown Waterloo drove that point home to us.  He puts together an evening of fun and food...LOADS of both...like TRUCK LOADS...and calls it Trust the Fat Guy.

Roger and I were invited out recently by a great couple Tony and Deb Frey (Deb owns an amazing local resource website geared for people relocating to our area and it's called www.NewToWaterloo.com ~ Roger and I are some of her advertisers).  We had no idea what we were in for, other than the fact that we were told to wear stretchy pants.  When we were served the first course of a six course meal, we then had a greater understanding of the instructions we were given.  Chef Stef used 3 avocados for 4 people if that tells you anything. 

If I remember correctly, it went like this:

Guacamole and chips

Crab cakes

Pork tenderloin served with Granny Smith apple and pear slaw

Duck served with baby bok choy

Lamb served with heirloom carrots

Blueberry and lemon tart in a shortbread crust with a slice of peanut butter and dark chocolate Easter egg made by Chef Stef's wife

If we hadn't been dressed appropriately, we would have been extremely uncomfortable because I'm pretty sure we consumed enough calories for two days in that one four-hour meal.  I'm not sure if I could or should partake in this type of an evening often, but I will say that this was one of the most memorable and enjoyable nights out we have ever had.  The food, the entertainment, and the wonderful conversation and stories shared amongst new friends...it all just left us with our hearts as full as our bellies.
