PUMPKIN LAYER DESSERT RECIPE
Fall is such a beautiful time of year everywhere, but especially here in the Okanagan! The sun is still warm and the fall colours are spectacular!! As the leaves are finally starting to fall and the days are getting cooler & shorter we find ourselves staying cozy indoors. Fall represents the harvest in the Okanagan and with that comes many delicious foods that are all grown locally. I love yummy soups, pastas and all around “comfort” foods at this time of year as the weather starts to cool down! On this blog, I thought I would share one of my favourite dessert recipes- Pumpkin Layer Dessert (credit to my Mom for this one!!)

Pumpkin Layer Dessert
A light, delicious FALL treat
Crust (Layer#1): 1/3 cup white sugar, 2 cups crushed graham wafers, 1/2 cup margarine or butter
(Pack above 3 ingredients into 9 x 12 pan to form a crust)
Layer #2: 8 oz. cream cheese, 3/4 cup white sugar, 2 beaten eggs. Beat together.
Pour over crust and bake for 20 minutes at 325 degrees.
Layer #3: 3 egg yolks, 2 cups canned pumpkin, 1/2 cup sugar, 1/2 cup canned milk, 1 tsp Cinnamon, 1/4 tsp. salt
Cook layer 3 (on stovetop) until thick. Remove from heat and add 1 pkg. knox gelatine dissolved in ¼ cup water. Mix and pour over 2nd layer (cream cheese layer).
Layer #4: 1 small carton of whip cream, whip together with 1 Tbsp icing sugar and 1 tsp vanilla. Spread whip cream on pumpkin layer after it is thoroughly chilled. Lightly sprinkle cinnamon on top! Enjoy!!!!
