Recipe-Spinach Salad With Strawberries and Feta

Here is a nice spring or summer salad that is easy and fast to prepare; If only the spring was here already...

Prep time:15 minutes Total time:15 minutes  Yield:4 servings

Ingredients for salad

6 packed cups of baby spinach leaves

2 1/2 cups stemmed, thinly sliced strawberries (about 1 1/2 pints)

3/4 cup crumbled feta cheese

1/2 cup slivered almonds, toasted

Ingredients for dressing:

1 tablespoon freshly squeezed lemon juice

1 teaspoon honey

3 to 4 tablespoons extra virgin olive oil

Salt and pepper to taste


1. Put all the salad ingredients in a large mixing bowl.

2. Make the dressing by mixing lemon juice and honey together in a small bowl. Gradually whisk in olive oil, adding it in a very thin, slow stream and whisking rapidly until an emulsion forms. Taste and season with salt and pepper.

3. Toss the dressing with the salad and serve.
