Forest Hillers of all types frequent this 24-year-old neighbourhood mainstay. Impeccably fresh ingredients are prepared with flair. Delicately soft B.C. white tuna slices are fanned over a mound of frisée, and a nest of carrot spirals on a bright turquoise plate. Scallop nigiri is one third the price of Kobe rib-eye nigiri (which, at $35, requires advance notice) but twice as pleasing, its fine texture surpassing the beef’s chewy texture. A good sake selection and a wine list that offers a bottle for every budget. $16–$23.
