Recipe: Mint Chocolate Cake Cookies

Mint Chocolate Cake Cookies:

1 cup unsweetened cocoa
1 cup butter
1 cup milk
1 cup water
2 eggs
2 tsps baking soda
1 tsp baking powder
½ tsp salt
1 tsp vanilla
4 cups flour
Royal Icing (Recipe below)
Crushed candy canes

Line cookie sheets with parchment paper and preheat oven to 400 degrees F.
Combine all ingredients and beat until well mixed (in no particular order).
Drop teaspoonfuls of dough 2 inches apart onto prepared cookie sheets.
Bake for 7 to 9 minutes or until top of cookie springs back when touched lightly in centre.
Remove to wire rack and cool.

Drizzle with Royal Icing and immediately sprinkle crushed candy canes on top. 

Note:  Royal Icing dries REALLY fast so as soon as you drizzle it over your cookie sprinkle the candy canes on the cookie or else the candy canes won't stick in the icing.  

Royal Icing Recipe:
1 1/2 tbsps Meringue Powder
2 cups confectioners' sugar
3 - 6 tbsp warm water 
Beat all ingredients together really well, about 5  minutes.  Keep unused icing covered as it hardens REALLY fast.

NOTE: Keep all utensils completely grease-free for proper icing consistency
